Diabetic Strawberry Cake
Serves 6


  • 1 Sugar free angel food cake, Sliced
  • 1 box sugar free free Jell-O
  • 1 Cup Boiling Water
  • 1/2 C. Cold water
  • 1 Package strawberries (no sugar)
  • Fat Free Cool Whip (Optional)
  • Jello Mold or Baking Pan


Directions: Spray pan with non stick spray. Place strawberries in pan. Put cake on top of strawberries. mix Jell-O with boiling water stir until dissolved add in 1/2 cup of cold water. Pour over cake  and refrigerate for 3 hours or until cool and firm.

Nutritional Facts with out whip cream or cherry: 88 Calories, 0 fat, 88mg sodium, 26 g Carbs, 4g fiber, 4g protein







Diabetic Cream Cheese Fudge
Serves 16

  • 16 oz cream cheese
  • 2 squares of unsweetened Chocolate (chopped fine)
  • 1/2 c. Splenda
  • 1 TBSP of Vanilla extract
  • 1 small bag (2oz) of chopped pecans (optional)

Directions: Place all ingredients  in a bowl except nuts. Beat on medium speed until mixture is soft and creamy. Mix in Nuts and place mixture in a 8 X 8 foiled line pan. Cover with foil and place in the refrigerator over night.  

Nutritional Facts: 130 Calories, 11 g fat, 117mg sodium, 9 g Carbs, 1g fiber, 2.5g protein



Chocolate Peanut Butter Crispy Treat
 serves 16

  • 4 Cups miniature marshmallows
  • 4 Cups  rice crispy cereal
  • 4 Tablespoons peanut butter 
  • 1/3 Cups chocolate chips
  • Cooking spray

Directions:  Get an 8 x 8 baking pan and coat with cooking spray. Spray a pan for on the stove. Melt the peanut butter at a low heat in a pan. Continuously stir as the peanut butter until peanut butter is melted. When completely melted add the marshmallows and continuously stir until the marshmallow mixture is melted and smooth. Immediately remove from heat and stir in crispy rice cereal and chocolate chips. Stir until all of the cereal is coated. Put the mixture in the sprayed pan and even out with spatula or spoon.

Light Key lime pie
Serves 6

1 Yoplait Light & Thick Key Lime
4 oz Free Cool Whip 
6 mini Ready Graham Cracker Crust (kieblers)

Directions: Combine yogurt and cool whip in a medium size bowl. Pour into Crust. Refrigerate for an hour.  Enjoy!

Light White Chocolate Strawberry pie
Serves 6

1 Yoplait Light White Chocolate strawberry yogurt
3 strawberries cut in half
4 oz Free Cool Whip 
6 mini Ready Graham Cracker Crust (kieblers)

Directions: Combine yogurt and cool whip in a medium size bowl. Pour into Crust. Freeze for about an hour. Top with strawberries

Nutritional Facts: 159 Calories, 25 g Carbs.



Crust-less Apple pie
Serves 8 (1 inch square)

4 Large Apples (peeled, cored and thinly sliced)
3 tbsp splenda with sugar
1/2 tbsp cinnamon
1/4 tbsp nutmeg (optional)
1 tbsp flour

Directions: Preheat oven to 350*F. Spray a 8 X 8 baking pan. Mix apples, splenda, cinnamon, nutmeg, flour together in a large bowl. Bake in oven for 40-50 minutes. Serve and Enjoy! 

*Would be great with a dab of frozen yogurt!

Crust-less Dutch Apple pie
Serves 8 (1 inch square)

Filling:
4 Large Apples (peeled, cored and thinly sliced)
3 tbsp splenda sugar blend
1/2 tbsp cinnamon
1/4 tbsp nutmeg (optional)
1 tbsp flour

Crumble Topping:
1/2 c. Flour
1/4 c. Brown Sugar
1/4 c. Splenda sugar blend
4 tbsp margarine (diced)


Directions: Preheat oven to 350*F. Spray a 8 X 8 baking pan. Mix apples, splenda, cinnamon, nutmeg, flour together in a large bowl. Place in baking dish. In another bowl for topping. Mix flour, brown sugar, splenda and margarine. Mix until mixture becomes crumbly. Disperse evenly over apple mixture.  Bake in oven for 40-50 minutes. Serve and Enjoy!

Caramel Apple Salad
Serves 16

8 oz. tub of Cool Whip FREE
1 box sugar free instant Butter Scotch Pudding mix
14 oz. can pineapple tidbits in juice (drain juice and set aside)
4 large Red Delicious or Fuji Apples (or more)
4 large Granny Smith Apples (or more)

Directions: Combine pudding mix and pineapple in large bowl. Mix well and set aside. Dice apples into small pieces and combine with pudding mixture. Add in some pineapple juice to make a thinner consistency if desired.  Fold in Cool Whip FREE till well mixed. Chill and serve.
