Smothered Chicken with Roasted Mushrooms and Tomatoes

Smothered Chicken,  Roasted Mushrooms and Tomatoes
Serves 4-6 Cost $2.46 per person 

Smothered Chicken 


  • 4-6 boneless skinless chicken breast 
  •  Seasoning of choice (I like just using some salt and pepper)
  • 1/2 C. Fresh Sliced Mushroom
  • 1/2 C. Sliced Onion
  • 1/2 C. Green Pepper
  • 1-2 tbsp olive oil 
  • 4-6 Slices of Bacon (precooked cut in half)(Optional)
  • 1/2 C. Shredded Pepper Jack Cheese. 


Roasted Mushroom and Tomatoes


  • 2 Cups Of Cherry Tomatoes (washed and rinsed)
  • 2 Cups of Fresh Mushroom  (washed and rinsed)
  • Olive Oil Spray
  • Seasoning of Choice


Directions: preheat oven to 400. Place chicken in a baking pan for 45 minutes or until juices run clear. Poultry should be at 165 * F. In a pan sautee mushrooms, peppers and onions. Heat bacon slices in microwave. Place mushrooms, onions and bacon slices on chicken. Sprinkle with cheese. Put back in oven until cheese in melted. In the meantime spray a cookie sheet, place mushrooms and tomatoes, lightly spray mushrooms and tomatoes with olive oil spray (vegetable spray works too) season lightly with your favorite seasoning. Bake for about 10 minutes or until vegetables are tender. Plate and Enjoy!
