Fruit Parfait

Fruit Parfait
Serves 2

  • 1- 6 oz container of Light and Fit Vanilla Yogurt
  • 3 oz of frozen strawberries (unsweetened) could use fresh
  • 1 oz frozen blueberries (unsweetened) could use fresh
Directions: Mix together the fruit. Place 1.5 oz of yogurt in a desert cups. Top with 2 oz of fruit. Top with 1.5 oz yogurt. Repeat for other fruit parfait. You could also top with 1 tbsp of granola. The granola is not included in the nutritional facts. 

Nutritional Fact: 62 calories, 14 g carbohydrates
Nutritional Fact for both serving: 124 calories, 28 g carbohydrates

Fruit Salsa

Fruit Salsa
Serves 8


  • Apples, fresh, 2 medium
  • Strawberries, fresh, 1 pint as purchased,
  • Grapes, 1 cup, seedless 
  • Pineapple Tidbits 100% Pineapple juice, 1/4 cup
  • Diet Lemon Lime Soda (such as Sprite, 7-Up) 2 oz 
  • 1 tsp Brown sugar or  taste (optional)
  • 1 tsp White sugar or taste (optional)


Directions: Rinse and Wash all fruit. Peel and Core Roughly Dice Apples, Cut Tops off strawberries Roughly Dice, Quarter Grapes, Drain Pineapple, Diet Soda (stops fruit from turning brown) 

Put all ingredients in a food processor, pulse until desired consistency, and scoop into a bowl using a slotted spoon to leave any extra juices behind.

Serve with Graham Cracker sticks, Cookies or Layer into a Parfait using Sugar free Chocolate and Vanilla Pudding.
