Italian Vegetable Soup (Stove top or Crock pot)

Serves 4
  • 4 cups of Vegetable broth  (Chicken or beef Broth would work also)
  • 2 large tomatoes, chopped and seeded (1 cup)
  • 2 medium carrots sliced (1 cup)
  • 1 medium stalk celery, sliced (1/2 cup)
  • 1 medium onion, chopped (1/2 cup)
  • 2 garlic cloves, minced
  • 1 tbsp of fresh parsley chopped (1/2tbsp dried)
  • 1 1/2 tsp of fresh basil chopped (1/2 teaspoon dried)
  • 1/4 tsp salt
  • 1 bay leaf, whole
  • 1/2 cup uncooked macaroni
  • 1- 15 ounce can red or white kidney beans rinsed and drained
  • 1/4 cup of fresh green beans, cut
  • 2 smalls zucchini, cut into 1-inch slices (2cups)


Directions: In large saucepan, heat vegetable broth, tomatoes, carrots, celery, onion, garlic, parsley, basil, salt,and bay leaf to boiling. Reduce heat, Cover and simmer 15 minutes.

Stir in macaroni, beans, green beans, and zucchini. Heat to boiling, reduce heat. Cover and simmer 10-15 minutes, or until macaroni and vegetables are tender. Remove bay leaf. Serve warm.

Macaroni & Tomato Soup

Macaroni & Tomato Soup 
Serves 2

  • 1/2 c. Dry Macaroni Pasta
  • 4 medium tomatoes (largely diced)
  • 2 tsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp of peppers
  • 1 c. Chicken broth

Directions: Cook Pasta according to directions . In a separate pan, heat oil and add fresh tomatoes, salt and pepper. Stirring occasional for about 5 minutes. Add in chicken broth, heat. In the meantime drain pasta and mix into the tomato. 

*I like to add extra vegetables in with mine and a little hot sauce to spice it up a little bit!

Macaroni & Tomato Soup with broccoli 

Italian tortellini Soup

Day # 19

Italian tortellini Soup
Serves 6

  • 1 # Italian sausage hot or mild (remove casing if using links, also can use turkey sausage)
  • 1 medium onion, chopped
  • 1 Can Delmonte Basil, Oregano and Garlic Tomatoes, (undrained) (unsalted if you watching your sodium levels)
  • 4 cups reduced-sodium chicken broth
  • 1 package (9 ounces) refrigerated cheese tortellini
  • 1 package (6 ounces) fresh baby spinach, coarsely chopped
  • 1/4 teaspoon pepper
  • Pinch  of crushed red pepper flakes (optional)
  • Shredded Parmesan cheese, (optional)

Directions:  Place onion and sausage into a stock or large pan.  Brown sausage (no pink) on medium heat. Add the broth and tomatoes. Bring to a boil. Stir in tortellini, return to a boil. Reduce heat; simmer, uncovered, for 5-8 minutes or until pasta is tender, stirring occasionally.  Add the spinach, pepper and pepper flakes; cook 2-3 minutes longer or until spinach is wilted. Serve with cheese if desired.

Crockpot Chicken Noodle Soup

Day #4.

Chicken Noodle soup
Serves 4-6 Cost $2.05 per person 



  • 1-2 C.Chicken
  • 1C. Chopped Celery
  • 1C. Chopped Carrots
  • 1/2C. Diced Onion
  • 64 oz Chicken broth (2 cartons)
  • 2c. Rotini Noodles 



Directions:  Preheat oven to 400*F. Foil Line a baking sheet/pan. Bake 30 minutes or until juices run clear. In the meantime you can chop celery, carrots and onions. Place broth and chopped vegetables in crock pot and boil your noodles and directed on package. Get chicken out of oven and cool to make easier chopping, then place in crock pot. Turn crock pot on low for 6-8 hours or on high for 4 hours. Drain noodles and put in a bag in the fridge. Place noodles in crock pot 10-15 minutes before serving. 

Note: I usually prepare everything the night before so when I wake up in the morning all i have to do is put it in the crock pot. I also use chicken that I cooked earlier in the week to save prep time. Remember never put hot items in a cold crock pot and visa versa!

Italian Soup

Day #1.

Italian Soup 
Serves 4-6. Cost $1.91 per person 



  • 1 lb. Italian Sausage (hot or mild)
  • 1/2 c. chopped green pepper
  • 1/2 c. chopped onion
  • 2 cans of. diced delmonte  Basil, garlic and oregano tomatoes (I use no salt added)
  • (2) 8 oz. cans tomato sauce
  • 2 c. water
  • 1 T. instant chicken bouillon/cubes (optional)
  • 3/4 c. macaroni or small pasta shells
  • shredded cheese for topping(Optional)

Directions: Brown sausage, green pepper and onion. Drain. Stir in all other ingredients except macaroni. Cover and simmer 15 minutes. Stir in macaroni. Cover and simmer an additional 12 minutes or until pasta is tender.
