Healthy Smothered Grilled Chicken
Serves 4
- 4- 4oz Boneless Skinless Chicken Breast
- Seasoning of choice for chicken breast
- 1 Large Onion (Sliced into thin strips)
- 1 Large Green Bell Pepper (sliced into thin strips)
- 8 oz of sliced mushrooms
- 1/2 C. of shredded Monterey Jack & cheddar cheese
- 1 tbsp of olive oil
Directions: Preheat Grill. Season chicken breast on both sides, grill 5 minutes on each side only turning once. Chicken is done when internal temp reaches 165*F.
In a small frying pan, heat 1 tablespoon of the olive oil over medium heat. Add the peppers and onions and sauté for about 3 minutes. Add the mushrooms and cook for 2 minutes more, stirring occasionally.
Top chicken with sauté mixture and 2 tbsp of cheese. Pop in microwave for 30 seconds or until cheese is melted. Serve and Enjoy!
